Carrot Top Pesto
/(makes about 1 cup)
2 bunches carrots w/ leafy greens still attached (wash)
1 clove garlic
1 lemon zest+juice
1/2 olive oil
salt+pepper
Add cleaned greens, garlic, & lemon to food processor. Pulse until all ingredients are broken down. With food processor running, stream in olive oil until all is combined. season to taste with salt & pepper.
